1 egg
1 c sugar
1 c peanutbutter
1 tsp vanilla
Mix together, roll into balls and bake on ungreased cookie sheet. 325 degrees for 10 minutes.
This is such a simple recipe and it turns out yummy. We did these for family night last night. I ran out of flour and was trying to find a fast, easy recipe. This is what I found. With just four ingredients it was super fast. Made about 2 dozen.

My friend used this recipe and loved it so I hear it's really good.
My friend made these again and said they stayed in a little tiny ball. She said she used a small egg this time so she wonders if that changes it. Mandy, have you noticed if using a different sized egg changes anything? That would be good to know. Mike thinks we should try powdered sugar. We tried them tonight at my friend's house and they were really good. Thanks for this recipe.
We made these again, too. I always use extra large eggs. I forgot to push them down with a fork the first batch. They stayed in a ball. The next pan I flattened with a fork and they were fine. I also added chocolate chips... and they were ok, but I have to say they were better w/o the chips. They got better as they aged, though.
