Three-Cheese Potatoes Recipe

Ingredients

  • 3 large potatoes, peeled and cut into 1-inch cubes
  • 1 medium onion, chopped
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon minced chives
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1/2 cup crumbled cooked bacon
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Directions

  • In a large bowl, combine the first six ingredients. Transfer to a double thickness of greased heavy-duty foil (about 18 in. square). Dot with butter.
  • Fold foil around potato mixture and seal tightly. Grill, covered, over medium heat for 15-18 minutes on each side or until potatoes are tender.
  • Carefully open foil. Sprinkle the bacon cheeses over potato mixture. Grill 3-5 minutes longer or until cheese is melted. Open foil carefully to allow steam to escape. Yield: 4-6 servings.
Nutritional Facts1 serving (1/2 cup) equals 293 calories, 11 g fat (7 g saturated fat), 36 mg cholesterol, 614 mg sodium, 36 g carbohydrate, 3 g fiber, 13 g protein.

Cheesy Potato Soup

Cheesy Potato Soup

5 cups diced potatoes
1/2 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
3 cups water
3 chicken bullion cubes
Boil 15 minutes

White Sauce:
3/4 cups butter
3/4 cups flour
4 cups milk
8-12 oz Velvetta Cheese

Add the white sauce to the potatoes and other veggies after they are cooked. Cut the cheese into small pieces and then stir into the potato/white sauce mixture. Cook over medium heat until cheese is fully melted.

*Mike really likes things salted so you can add salt if the bullion isn't enough salt for you. You could also put in a clove of garlic is you want but we don't usually do that.

Ham, Cheesey Potato Casserole

Amy said Michelle made this and froze it so it could be served to her family when they were gone. Amy said this is very, very good.
1 cup chopped ham
8 medium potatoes sliced thinly
2 cans cream of chicken soup
1 cup sour cream
1 tsp salt or sprinkle season salt
1 cup diced onions
dash of pepper
2 cups shredded cheddar cheese
2 TBS butter
2 TBS rosemary season mix

Combine ham, soup, sour cream, salt & pepper. Mix in potatoes and onions. Pour in 3 qt casserole dish. Top w/ cheese. Cover with foil and bake at 275 F. for 3 ½ hours.
Serve with rolls and salad for a complete meal.
