Tortellini Primavera


I found this cookbook at a garage sale last summer. We really like this recipe. I'm not a fan of spinach and I was really nervous to try it but it is great in this recipe. I just half the amount of spinach.


1 cup sliced mushrooms

1/2 cup chopped onion

1 clove garlic, minced

2 Tbs. margarine

1 package chopped spinach, thawed, well drained (or half it if you don't like spinach)

1 container (8 oz) creamed cheese

1 medium tomato, chopped

1/4 cup milk

1/4 cup grated parmesan cheese

1 tsp Italian seasoning

1/4 teaspoon salt

1/4 teaspoon pepper

8-9 ounces fresh or frozen cheese-filled tortellini cooked and drained


Prep time:10 minutes

Cook time:10 minutes
