Sweet Potato Souffle

This is a recipe that Mike grew up with.  He introduced it to me our first Thanksgiving.  I wasn't really familiar with sweet potatoes so I was kind of worried but it was delicious!  We eat it for every Thanksgiving.

Sweet Potato Souffle

3 c. sweet potatoes cooked and mashed
1/2 c. sugar
2 eggs
1 t. vanilla
2/3 c. milk
1/2 c. butter
a little brown sugar

Mix and put in a buttered casserole dish.  Top with 1/3 c. self rising flour, 1/3 c. butter, 1 c. chopped pecans, 2/3 c. light brown sugar.  Bake at 350 degrees for 40-45 min.
