This is another diabetes recipe I found just doing a search. I wish I had written down where I got if from though.
Ingredients:
3 cups cooked black beans
2 tomatoes, chopped
2 red peppers, finely chopped
1 cup yellow corn
3 garlic cloves, minced (I don't think I used three)
1 jalapeno pepper, minced (I didn't put this in because of the boys but would if it were jut Mike and I eating it)
1/4 cup fresh lime juice
2 Tbsp red wine vinegar
1 Tbsp cumin
1 Tbsp olive oil
2 Tbsp chopped fresh cilantro (optional)
Preparation:
I lost the rest of the recipe so this is from my memory now. Drain the beans and chop up the tomatoes, peppers, and cilantro. Mix everything together. I served this with chicken but you could use it with a salad as well.
